My team plans to create a bot that will trap an opposing team’s bot in their isolation zone by extending the sides of the bot with bars. Would this be considered pinning or not because they are not stuck against a field element?

This would not be considered pinning, provided that the opposing team has approximately at least 2’x’2 to maneuver, i.e. one foam field tile. Please see these two previous Q&A entries for more details.
