I provided three images, the first shows how we have blue and red on one side, it’s the same on the other.
Lets say I was blue alliance, so basically I would cover up the red plates with our extra blue plates, like just bolting it over the red. Is it legal to use 6 plates in a match? It would be just to cover up the color we don’t need.

Yes, this would be legal. The intent of <R19> and the plates is to make your team number and alliance colour clear to the audience and volunteers. The arrangement you’ve described meets that intent and does not violate any other rules.
