I am a mentor for a new VexIQ school in central Texas. We would love to connect with other teams in the area but I am finding it very difficult to search/find other teams. I saw some much older posts on this topic, and also looked on Vex site but came up short.
Any suggestions on where to look?

You can see other teams from earlier competitions on Robot-Events, and cross your fingers that they are competing this year.

While I appreciate the shout-out, we encourage everyone to contact their Regional Support Manager. That person should be your first point of contact for everything you need!
Happy to help. Your team needs to address minor things, like the map doesn’t show an RSM for Delaware. It does show Louann as the Drone Program Rep. Maybe Delaware could get her as a RSM? She knows where Delaware is, and is really awesome answering phone calls and making things happen.
