They do flip around a bit depending on how well built it is, but it’s usually not a problem.
Do you think a flip-out mecanum would work or would the wheel offset mess with the holonomic motion too much?
Why would you flip out mecanums when they can already strafe? The only reason for this would be to get more room inside the chassis, in which case you would be better having them mounted on short sliders and extend them by strafing each side in opposite directions, at which point you would need some way of locking them in place.

You could just expand the front, turning would be affected slightly because the wheels will be at different radii from the centre of turning, but it shouldn’t be much unless you’re expanding heaps. Forwards/sideways/diagonal won’t be affected.
The trick is going to be holding the wheels solidly enough, but I’m sure you’ll work something out if you haven’t already.
Move the front wheels back into the middle of your chassis and have small stability wheels on the front, like the super stacker.
As far as we can tell, this wouldn’t affect your holonomic capabilities, plus it would help your weight distribution (the front wheels would have more weight on them and the robot wouldn’t curve while strafing).
