I will serving as a mentor to high school VeX team for the 2019-2020 academic year. I would like to see any datasheets and manuals for the VeX EDR hardware (encoders, transmitter, motors, sensors, etc.).

As far as I know no one has created a repository with all of that information since VEX hosts it all individually on the product pages themselves.
If you look at the V5 system for example they have everything at the bottom of the page, also posted are compatibility and CAD files for the products. If you are looking for a specific answer on one or two items the forum should be able to help you out.
