Our team is new and starting this year. We have purchased and built the Super Kit, but now realize that we have not figured out how to pickup or launch the disk.
Do we use the arms for the intake, what is the point of a rotating disk track, how are we meant to shoot?

Just to clarify, by spin up super kit do you mean this link?
If so, this is a kit designed for an older competition, namely change up, because vex encourages innovation and won’t sell you a prebuilt robot.
However, they do have the hero bot, which may alsovbe what you are referring to, but it doesn’t sound that way. The hero bot for spin up is very basic, designed to be a framework for your own additions. It’s mostly an intake, and you should design your own mechanism for launching discs into the high goal. Again, vex doesn’t like giving ideas out, they like making you think of them. However, the hero bot is the compromise between innovation and a starting point.
If you are looking at building a good robot with basic parts, mentorbuilt would be a good place to look. Just search for it in the search bar. I recommend not just copying another robot, because you will learn a lot more working in your own design, and it may even be better. A good idea might be to make a decision matrix and research good robots this year. Many have already been revealed, and it’s very possible to build a good robot for world’s from these ideas. We have indeed purchased the first kit, and I now understand that this was a mistake. Being our first year, we asked two Vex staff members, and they both recommended it.
But by now understanding that it is not even meant to pick up the disks, I do have a couple ideas to personalize it and render it usable for Spin Up.

The kit is fine, most people as far as I know use it as a large selection of parts to make your own robot. VEX doesn’t sell a completed robot, as someone said above, the whole point is that you design and build it yourself. It wasn’t a mistake to buy the kit, you now have all the parts you need to build your own custom bot.
