I was watching a video of a robot or two that had what looked like a singe action (assumed) piston the started in the extended position. I know this may have been a double, but is it possible to get a single action to start in the extended position, fire, and return to the extended position?

Single acting cylinders are always spring retracted, and extend when pressurized. Double acting cylinders have the advantage that they can be used like single acting cylinders (just plug the extra port on the solenoid), and you’ll have the option of spring (rubber band) return or spring extend. This is why I would buy only double acting cylinders for pneumatics. The cost is minimal, and you have more options.
