Pole protection under 30 sec.

We can not seem to find a rule about being protected under 30 secs when trying to climb. Can the opponent throw elements at you when trying to climb?

There is no rule about being protected while trying to hang during the last 30 seconds. The rule that might have the most bearing is:

<G12> Strategies aimed solely at the destruction, damage, tipping over, disruption of Hanging, or Entanglement of Robots are not part of the ethos of the VEX Robotics Competition and are not allowed. However, VEX Starstruck is an interactive game. Some incidental tipping, Entanglement, and damage may occur as a part of normal game play. If the tipping, Entanglement, or damage is ruled to be intentional or egregious, the offending team may be disqualified from that Match. Repeated offenses could result in a team being Disqualified from the remainder of the competition.

Disrupting hanging at any time is not legal. However, it is at the discretion of the referees to determine if you opponent was tossing objects intentionally to disrupt your hang or if it was just an unfortunate accidental toss as the rule states, "Strategies aimed solely at the . . . disruption of Hanging . . . are not allowed.

In my experience as a mentor, referee and event partner, I have not seen this situation arise. Mostly because it has been rare to see a match where hanging was a viable strategy. Most of the best robots in WI can throw over more than 12 points in the time it takes to hang. If a robot goes to hang, we would just let it. Then throw over more than enough points to counter the hang. All it really takes is removing 6 points from our side and throwing them to the other side as that is a 12 point swing and that is a cube and a star into the far zone or many other combinations.
