I have no idea if this is possible, but is there a way to connect the VEX controller to a computer and use it as a gamepad?
It’s technically not impossible, but there are no drivers or software so it does not work. It’s much easier to use a cheap Logitech.
I remember hearing that you can use the xbone controller drivers and trick your computer into thinking that a Dualshock 4 is an xbone controller, although I’m not sure how difficult it is. If you can find out how that works, that might be a good start.

The VEX Joystick uses some really proprietary stuff, I recently took a logic analyzer to it and found some really REALLY strange interactions between the Joystick and the VEXnet keys.
