How can I simulate pneumatics without having them? Can I create a mechanism to simulate it?

You can
Make a linear slide but may be too big and require excessive modification
Two 1x1 angles and slide them over each other for a rough simulation with your hands
And better yet cad

You could make a non-pneumatic build with a slip gear slapper (might think of it as a “snapper”). A clamp arm that is pulled down with elastics, and pulled up with a torque gear ratio slip gear.

This is very similar conceptually to slappers last year… lots of videos/cad, including one of the early posts M-O VEX Over Under Robot Reveal: M-O
