Is it possible to create a Leader/Follower control between two V5 brains, similar to the ability with the VEX Cortex Leader/Follower via Uart1 and Uart2 ports? If so, how would I go with doing such a thing?

VEX Link sounds like a good solution to this problem, not a ton of documentation on it ATM though. Works wirelessly (with additional smart radios) or over a smart cable between the two brains:
