Couple of times I’ve found myself replying in an “Official” questions category. Is that just “wrong” on my part? If so, I thought it would be prevented automatically…

Unfortunately Discourse doesn’t support restricting replies in the manner esoTalk was set up to do. As such, everyone can respond in official channels.
I really like that people can respond to the official topics so we can get an unofficial answer before an official answer. There’s so many people and resources on this website I think that it’s a good idea to allow responses from the community, so answers can be quicker if it is urgent. And if the community doesn’t know then we generally leave the thread alone for someone else with knowledge/experience of the topic to answer.
I agree. On the old forum it seemed like many posts in the “Official” channels could just as well have been solved by community members. Often this resulted in “Unofficial Reply”-type threads in other sections of the forum. On the new forum, such threads are not necessary, and posts in the “Official” areas often get solved more quickly anyway.
