Does anyone know some good CAD softwares that are compatible with Linux and Vex IQ?
You may want to check out FreeCAD . It is totally free and runs on multiple platforms including Linux. You can import the IQ parts CAD files in STEP format online and use the A2plus Workbench in FreeCAD to assemble your robot.
I ended up using Onshape and I really like it!
