If you’re not using a template already, the template on notebooks.vex.com works

Take lots of pictures
Document everything that went into consideration while building your robot
Chronological order
Make sure font size is readable
Don’t write needlessly
Maybe color-coding different aspects of the design process

I’d suggest to grab an adult to help the team understand the rubric. (It’s OK for an adult to teach you how to read the rubric) The rubric is the EXACT way the judges are going to score your notebook. It tells you the information they are looking for and how to measure it. While @rs1 made some good suggestions, the rubric is your roadmap to success.
